Pakora with vegetables:

Pakora is an Indian snack with the addition of various variations of vegetables, which are dipped in chickpea flour dough (besan) and fried in oil.

 

Ingredients:

- about 1/4 cup of various vegetables each, e.g. carrots, cauliflower, capsicium, frenchbeans, broccoli *

-1/2 teaspoon chopped fresh green chilli 

-1/2 teaspoons of chopped ginger

-1/4 cup of chopped onion

 

Spices:

-a pinch of ground turmeric and hing (asafoetida)

-1/4 teaspoon each: ajwan seeds, ground chilli, Garam Masala

-salt at your discretion

 

-1/2 cup TRS chickpea flour

-1/4 cup of water

 

-frying oil

 

Preparation:

1. Wash all vegetables, peel them and finely chop or grate them on a coarse mesh. Put everything in a bowl. Add chopped green chillies, ginger, and onions, mixit . Add all spices and mix again. Add the chickpea flour, mix and set aside for a few minutes. Then pour the water in small portions until a dense but pouring dough forms.
2. Heat the oil in a wide saucepan (minimum 4 cm above the bottom). Put a spoonful of dough with vegetables and fry on medium-high heat on both sides until golden (the oil should be sufficiently heated up, temperature approx. 180 degrees C).
3. Serve the hot pakora with Chutney (Green, Mint) or ketchup. It is also worth sprinkling with Chaat Masala.
