Components:

  • 2 tablespoons curry seasoning (http://www.littleindia.pl/trs-mieszanka-przypraw-madras-curry-lagodna-100-g.html or http://www.littleindia.pl/trs-mieszanka-przypraw-madras-curry-ostra-100-g.html)
  • 1 tablespoon amchur (mango powder)( http://www.littleindia.pl/trs-mango-w-proszku-100-g.html)
  • A few chili peppers well chopped (http://www.littleindia.pl/green-chilli-250-grams.html)
  • 4 garlic cloves, peeled and crushed
  • 2.5 centimeters of fresh ginger, peeled and chopped (http://www.littleindia.pl/imbir-swiezy-1-kg-683.html)
  • 16 small Tinda fruits, peeled and cut into quarters
  • A pinch of sea salt to taste
  • A can of coconut milk (or 300ml of natural yogurt) (http://www.littleindia.pl/mleko-kokosowe-400g.html)
  • A handful of fresh chopped coriander (http://www.littleindia.pl/kolendra-peczek.html)
  • 10 small aromatic tomatoes cut into quarters

A method of preparing:

  1. In a saucepan, heat the ghee on low heat and add mustard seeds. When they start to crack, add curry spice, amchur and chili. Stir for a while and then add garlic and ginger. Continue mixing so that the contents do not stick to the bottom.
  2. Add Tinda and cook over low heat until soft, stirring gently. Add half the tomatoes. Add salt to taste.
  3. When Tinda is almost ready (almost soft) add the rest of the tomatoes, coconut milk and coriander. Continue cooking for the next 5 to 10 minutes.
