- 1 tablespoon amchur (mango powder)( http://www.littleindia.pl/trs-mango-w-proszku-100-g.html)
- A few chili peppers well chopped (http://www.littleindia.pl/green-chilli-250-grams.html)
- 4 garlic cloves, peeled and crushed
- 2.5 centimeters of fresh ginger, peeled and chopped (http://www.littleindia.pl/imbir-swiezy-1-kg-683.html)
- 16 small Tinda fruits, peeled and cut into quarters
- A pinch of sea salt to taste
- A can of coconut milk (or 300ml of natural yogurt) (http://www.littleindia.pl/mleko-kokosowe-400g.html)
- A handful of fresh chopped coriander (http://www.littleindia.pl/kolendra-peczek.html)
- 10 small aromatic tomatoes cut into quarters
A method of preparing:
- In a saucepan, heat the ghee on low heat and add mustard seeds. When they start to crack, add curry spice, amchur and chili. Stir for a while and then add garlic and ginger. Continue mixing so that the contents do not stick to the bottom.
- Add Tinda and cook over low heat until soft, stirring gently. Add half the tomatoes. Add salt to taste.
- When Tinda is almost ready (almost soft) add the rest of the tomatoes, coconut milk and coriander. Continue cooking for the next 5 to 10 minutes.
