Fruit of the horseradish tree (Moringa oleifera)

 

Moringa fruits are green, elongated, ribbed, up to 60 cm long. Inside there are seeds with three wings. Fresh pods are a great source of Vitamin A! 100g contains as much as 120 mg, which is almost twice the value of the daily requirement (vitamin C cannot be overdosed). Vitamin C strengthens immunity and helps to get rid of free radicals from the body. They also contain a lot of B-complex compounds such as: pyridoxine (vitamin B6), folates (folic acid), thiamine (vitamin B1), riboflavin (vitamin B2), pantothenic acid (vitamin B5), niacin (vitamin B3 (PP ).

 

Moringa pods should be thoroughly washed and dried. Cut the ends off and cut into pieces about 2-4 centimeters long. They are added to all kinds of soups and curries.


Ingredients:

  • Drumsticks 2-3

  • 2 medium chopped onions
  • 6-8 cloves of garlic

  • 2 tablespoons of roasted peanuts
  • 2 Tamarind paste dippers (http://www.littleindia.pl/trs-koncentrat-z-tamaryndowca-400-g.html)

A method of preparing:

  1. Scrape the Drumsticks and cut them into pieces approximately 2.5 centimeters long. Pour 2-3 glasses of water into a non-stick pan and heat. Add turmeric, salt and chopped drumsticks. Cover and bring to a boil.
  2. In a second frying pan, heat the oil. For hot oil, add mustard seeds, lentils, curry leaves, and onion. Stew until the onion is golden brown.
  3. Make a paste with garlic, ginger, chili and nuts in a mortar, adding a little water
  4. Drain the drumsticks and add them to the pan with the onion. Add the ginger and garlic paste. Mix
  5. Add salt and mix. Cover and stew on low heat. Add some water left over from cooking drumsticks. Cover again and cook until drumsticks are soft.
  6. Add the tamarind paste and mix well
  7. Serve hot.
